It’s 6 in the morning on a Saturday. Waffles gets up, he is as energetic as always even though it’s still so early. That’s because he works his waffle stand on the local market in his hometown on Saturdays. He walks to the bathroom to brush his teeth and as he stares into the mirror he notices something sticking in his mane, it’s the waffle he lost last night before going to bed! He tries to pull it out of his mane but quickly discovers the syrup has gotten the waffle very stuck in his hair. “It’ll come off with lots of soap and water” he mumbles as he continues to brush his teeth while he uses his magic to get a bottle of “SuperShampoo” from his bathroom cabinet. He spits the toothpaste into the sink and gargles some water to get the remaining paste out of his mouth before turning on the shower and emptying the bottle of SuperShampoo into his mane, not realising that may be a little too much of the stuff. He succeeds in getting the syrup remainders out of his mane but at the same time, he accidentally creates a foam party in his bathroom. “Whooops! Silly me!” he exclaims as he takes notice of the chaos he created in his bathroom. “I’ll clean this up when I get back, I’ll be late if I do it now” he mumbles to himself while he dries off his coat and mane before leaving his house. Once outside he straps the belts of his mobile market stall around his waist before he starts trotting happily toward the market.

Arrived at the market he starts to get his stall ready for his favourite activity of the week, selling freshly baked waffles to hungry ponies. He starts preparing his waffle dough and heats up his grill while the first hungry ponies stroll onto the market. They quickly manage to find his stall and order a few fresh stroopwafels. Waffles loves it when ponies order fresh stroopwafels, he loves to make it a bit of a show when he prepares the stroopwafels for them. Spreading the stroop on the waffles in a beautiful swirl, using his magic. He gives the fresh stroopwafels to the ponies at his stalls after they’ve paid him a few bits for it. The day goes on and Waffles manages to sell many of his famous stroopwafels to lots of ponies.

When the market is over Waffles starts packing his stuff and folds his stall back into a wagon. Straps himself in front of it and starts to trot back home. Once home he parks the stall behind his house, removes the strap and walks back into his house where he finds the mess he left behind this morning…

Those silly ponies… PonyCon Holland isn’t happening today, it’s exactly one year from now. One full year to make the convention the best it can possibly be and we’re very excited to tackle this huge task that is organising a convention. The first big steps towards PonyCon Holland have been taken, we’ve got a venue and most of the boring legal stuff has been taken care of.

Now it’s time to move on to the fun stuff like planning events and panels, and booking guests of honour! And all the other things that tag along with making this convention super duper awesome. 

We also sincerely hope that by then our lives have returned to normal, and that we can enjoy PonyCon Holland and all the other conventions around the world.

We’ve still got a long road ahead of us, but it’ll be 2021 before we know it. We can’t wait to see all of you at PonyCon Holland 2021!

After nagging for weeks we finally convinced Waffles to write down his special recipe into a pictorial so everyone can make his delicious treats from home. So get your waffle irons out and let’s start the baking without further ado!

Necessary equipment

  • A very flat waffle iron. This type of iron is commonly named a “ice cream cone” waffle maker.
  • 2 saucepans (one big, one small).
  • A big bowl.
  • Pinkie Pie’s enthousiasme and Rainbow Dash’s nerve.

Ingredients

Waffles

  • 500 g / 4 cups flour
  • 250 g / 1 ⅛ cups melted butter
  • 150 g / ¾ cup light brown sugar
  • 1 packet of yeast
  • 1 dash of cinnamon
  • 1 dash of salt
  • 75 mL / ⅓ cup milk
  • 1 egg

Notes: The world will not explode when normal sugar is used instead of light brown sugar. On most packets of yeast there will be noted in how much flour is needed. So get a packet of yeast for 500 g flour.

Stroop (Caramel-syrup)

  • 250 g / 1¼ cups sugar
  • 40 ml / 2,5 tablespoons heavy cream
  • 40 g / 2 tablespoons sugar syrup
  • 1 dash of cinnamon
  • 112 g / ½ cup butter

Notes: The sugar syrup can be a wild variety of things: Glucose syrup, honey, apple treacle etc. As long as it is very viscous in texture and sweet, it will work.

Preparing the Waffle-dough

Step 1

Add all of the dry ingredients (flour, light brown sugar, yeast, cinnamon and salt) in a bowl and whisk them together.

Step 2

Melt butter and add the milk to the butter. Let the mixture cool down to just above body temperature (very important, yeast will be killed with a too high temperature).

Step 3

Add the butter/milk mixture and an egg to the dry ingredients and loosely mix together until most liquid is absorbed.

Step 4

Knead the mixture until it forms a solid dough. Let it rest for about an hour so the yeast can do its job. This is a good time to start on the stroop!

Making the syrup that will turn your waffle into a stroopwaffle

Notes: Be extremely careful with boiling sugar, it is much hotter than boiling water and very sticky. If you get this on your skin, you will get severe burns. This part of the recipe requires adult supervision and is not suitable for kids or the motorly compromised.

Step 1

Add a very small amount of the sugar to a big saucepan. The bottom of the pan should barely be covered.

Step 2

Turn on the heat to medium-low. Let the sugar slowly melt.

Step 3

Add more sugar when it is completely melted. Carefully move the pan to mix the melted sugar with the unmelted sugar. Remember, this is extremely hot! Repeat this progress until all the sugar is melted and caramelized. Make sure that new sugar is immediately added after the previous batch has melted, to stop the melted sugar from burning.

Step 4

Add the butter, sugar syrup, heavy cream and cinnamon in another small saucepan and let them slowly melt together while you keep an eye on the melting sugar. This mixture should be warm and ready when all the sugar has melted.

Step 5

Remove the sugar immediately from the fire once it has all melted. Carefully and slowly mix in the warm cream mixture. The sugar is extremely hot and will react violently with the cream mixture. It will bubble up and steam. Stir carefully until it has been combined. The “stroop” for your stroopwaffle is now complete! It will harden after it cools but will soften again when heated. It can be heated by microwave or “au bain marie

Assembling the stroopwaffles

Step 1

At first sight, the dough will not have changed while resting for an hour. Knead it again. It should become much smoother than before.

Step 2

Create golf-ball sized balls with the dough and place it in a preheated waffle iron. Close the waffle iron, but do not close the waffle iron completely and do not clamp it down. The waffle should be thin, but thick enough to vertically cut in half. Bake for about 3 minutes. Check the first waffle regularly so you’ll know how long your waffle iron will take.

Step 3

Put the warm waffle on a flat surface and immediately cut it while it is still very hot. Use a clean dish towel to be able to hold the waffle in place. You might think:” is it really necessary to cut a thicker waffle in two thinner waffles? Can’t I close the waffle iron completely to have two thin waffles to use without the cutting business?” I’m here to inform you that yes, it is really necessary. The texture will be completely wrong without this step. And it is not as hard as it seems. Just be very careful with the knife.

Step 4

Put about half a tablespoon of the warm “stroop” (syrup) on one halfs of your waffle. Put the waffle back together and press the stroop (syrup) between the waffles. Congratulations, you have now completed your stroopwaffle.

PS: If you insist on making them perfectly round, you can use a cookie cutter or a glass to cut the waffle immediately after it comes out of the waffle iron. The remaining crumbs are very good as an ice cream topper.

Waffles cleaned out the attic and sorted out the old things he wanted to sell at the Kingsday flea market before we had the chance to tell him it got cancelled this year. Seeing how excited he is we can’t seem to find the heart to tell the poor guy he has to stay home this year.

Kingsday didn’t get cancelled entirely, most dutchies still get a day off from work. There will still be many treats that we all love, but now with orange frostings, like the tompoes, the roomsoes and many more.

In a normal situation, we would all go onto the streets and have a nationwide party while wearing the most ridiculous orange coloured clothes and props we can find laying around somewhere in the attic. Children clear out the attic and take whatever their parents don’t care about anymore and lay it out on a blanket on the streets of the city centre where they sit all day in the often unpredictable weather of April to go home at the end of the day with a profit from twenty to one hundred euros (I’ve personally never made more than €30).

A festival on Kingsday

At the same time, many people are attending Kingsdays festivals over the country where they start drinking around noon whilst yelling along with well known Dutch songs. And as noon turns into eve most of those people will be absolutely hammered, producing a tonne of, often hilarious, drunk stories.

This year, however, with corona forcing us to stay home as much as possible we will have to make do with Kingsday just being a day off on which we’ve been asked to sing the national anthem from an opened window at a certain time.

Hi everypony! 

My name is Stroopwafeltje, but you can call me: Waffles! I’m the official mascot for PonyCon Holland, and I’d like to tell you a few things about myself! But where to start? 

Ahh, yes I know! Stroopwafels! Did you know I absolutely love those yummy cookies? You probably do, I mean, it’s my name and cutiemark after all. Oh! I actually got my cutiemark at a stroopwafel-eating-contest, I ate more than 30 of them in ten minutes! Man, I wish I could do that every day. 

Enough about stroopwafels for now tho. Let’s talk about how I became a member of the PonyCon Holland team! Soooo, about half a year ago I joined the BroniesNL team and I still don’t know why, but they asked me to become their mascot. Obviously I couldn’t say ‘no’ to that! When their 25th grand meetup kicked off, they introduced me to the rest of the community. And I don’t know how or why, but they adored me! Probably because there’s a cookie on my butt!

Oh! I love a good party and enjoy hanging out with my friends. Hmmm, what else is there to say about myself? Maybe some of the general strengths and weaknesses stuff? I guess I’ll go with that! My strengths are that I’m always cheerful and positive. And, uhm, uuh, I’m also quite a talkative little pony? Though that can also be a weakness at times. I’m easily distracted and I don’t always listen to other ponies as well as I should. But I guess, nopony’s perfect!

I’m hyped to get to know each and every one of you at PonyCon Holland 2021. In the meantime, I’ll keep writing posts every once in a while! So you all can be as excited about PCH as I am!

By the way! Make sure you stay tuned, I’m not allowed to say anything yet. But…some pretty big announcements about the event will be made pretty soonish. I’m sooooo excited for the convention! But waiting for 2021 is gonna take such a long time…

Happy Easter everypony!

Egg hunting, a brunch with your family and eating way too many chocolate eggs. This is how we celebrate Easter Sunday in the Netherlands.

Easter Monday is a different story… Especially when the weather is absolutely gorgeous like it has been for the past week. On Easter Monday we flock to garden centres, hardware stores and last but not least furniture stores like IKEA. The idea is to redecorate your house and make your garden look fabulous again after you’ve pretended it didn’t exist for the entire winter. But usually, the stores are so busy that by the time you get home again, you won’t have any energy left to do that.

It will all be a bit different this year. Some of us will luckily still be able to enjoy the Easter brunches with our families, but Easter Monday will be limited to removing the weeds from the garden this year. Sadly there are also many people who’ll be spending this holiday alone, our hearts go out to these people and everyone else who’s suffering because of the coronavirus. 

We’ll keep working hard to ensure PonyCon Holland 2021 becomes an amazing experience for everypony. We’re slowly getting closer to some announcements, so subscribe to our newsletter (you can do that at the bottom of this page) to stay tuned and be the first to know about things that matter.

Last weekend, after months of keeping it a secret, the moment was finally there: we were ready to announce our plans to run a My Little Pony convention in 2021 during the final edition of Hearth’s warming con (with which we aren’t affiliated).

We had a booth right next to the entrance where we laid out our flyers for you guys to take, which was a great success. We were already motivated to make PonyCon Holland the best it can be, but our motivation was pumped up to the next level after hearing all your positive reactions to our plans.

So, what’s next? Right now we’re looking around for a suitable venue for the convention and once we’ve got that covered it will be time to get this party started. And, we will be able to answer a question many of you asked, namely: “do you have a date”. However, we can already partly give you an answer to that question: we’re aiming to run PonyCon Holland in June 2021 (keep in mind that this isn’t a certainty yet).

Other questions we received with some frequency were:
Do you have a location for the convention?  Not yet, Once we’ve got a venue we will also have a location. We’re looking for a venue in the Randstad area (a triangle between Rotterdam, Amsterdam and Utrecht).
How many days will the con run for – We’re aiming for 2 days.
